Hi I'm Amanda, Big Al's wife!  I found out I had coeliac back in 2007.  My dad had been diagnosed previously, but strangely no one thought to tell the family to get tested.  Coeliac Disease can be hereditary we later found out, and realising I had symptoms synonymous with this I got tested.

With my dad having coeliac and my love of baking I spent years perfecting my gluten free recipes, some of which you'll get to try out on the truck in time. (Initially whilst we are finding our feet we will be providing mass produced cakes, although still lovely, for ease, but promise this will change shortly).  Those that have sampled them are genuinely surprised when they learn that they are gluten free.

Had been making cakes since the days of farmhouse kitchen one of my favourite programmes back in the day!  Since learning I have Coeliac Disease I was determined to learn how to decorate cakes too, not least because buying gluten free birthday cakes can be hard to come by.  Here's a photo of my sons gf cake, thankfully he doesn't suffer himself but was more than happy to tuck into this!  I currently only make celebration cakes for my family of whom 3 suffer with coeliac but this could change, for now am happy to share my recipes and tips.

This cake was made for my brother's niece all completely gf.  Top tip: Remember when decorating cakes that even food colourings need to be checked, I use Sugar Flair colourings (I'm not being paid to advertise for them).  They have confirmed that their products are gluten free.  They have a huge range of colourings too, so win win!

 

I made all the decorations for this freestyle without any moulds (except for the lettering/numbers and plaque).  Interested to learn how?  I will add a tutorial soon.

GLUTE FREE RED VELVET CAKE RECIPE 

330g Butter

480g Caster Sugar

<span;>• 3 tsp Vanilla Bean Paste or Vanilla Extract

<span;>• 1 1/2 tsp Red food Colouring Paste

<span;>• 3 Eggs

<span;>• 9 Tbspn Sunflower oil

<span;>• 2 1/4 Tbspn White Wine Vinegar or Cider Vinegar

<span;>• 105g GF Dark Chocolate (melted)

<span;>• 570g Doves Farm GF Plain Flour**

<span;>• 1 1/2 tsp GF Baking Powder

<span;>• 1 1/2 tsp GF Bicarbonate of Soda

<span;>• 2 1/4 tsp Dr Oetker * Cocoa Powder

<span;>• 210 ml Single Cream/Sour Cream/Buttermilk

<span;>• 210 ml Whole Milk

<span;>Cream Cheese Frosting

<span;>• 180g Butter

<span;>• 3 tsp GF Vanilla Bean paste or Vanilla Extract

<span;>• 600g Icing Sugar

<span;>• 1.2kg Cream Cheese

<span;>* Dr Oetker is GF and ensures a luscious moist sponge.

<span;>** I use Doves Farm but any GF flour is fine and you can use Self Raising instead of plain with or without the additional Raising agents (Bicarbonate of soda and Baking powder, these only really needed with plain flour but won't hurt with either and may help it raise more).  Some use GF Xanthum gum to provide stability and elasticity to a GF sponge but I've not noticed any substantial difference if any.
